Guffens Pourquoi Pas Rose
Here the grapes still come from the same limestone-rich soil as the rose above but with this wine Guffens sets out to craft something altogether more serious, full bodied, complex and food friendly. The fruit comes from specific parcels in the vineyard that Guffens picks riper. The must is fermented in stainless steel before being transferred to large wooden casks where it is matured on its nourishing lees for 7 months before bottling. The result is sensational: a striking, left field, complex and delicious rose. Not only a step up in power and fruit density - it really fills the mouth with creamy texture and chewy structure - but it is also incredibly complex and engaging. A thinking person's ros̩. Serve with Japanese Yakitori or Italian Spanner Crab and saffron linguine.
