Made by Mike Aylward, one of the most talented young vignerons in Australia. Grapes hand-picked and delivered to the gravity-fed winery. The ferment is kept cool and results in fabulous aromatics. Post-fermentation, the wine is pressed to barrel and stored in the underground barrel room at constant temperature for 12 months. Bottled without filtration and fining.
Wow, slightly cloudy appearance, fantastic fruit forward aromatics of raspberry and red cherry with some forest floor lurking underneath. Dark berry fruits and chewy palate with dried herbs and fine charry oak elements. The wine finishes firm and plush with fine savoury tannins and balanced acid structure. This is one elegant Pinot Noir with incredible pedigree. Love it! Serve with Duck and Pistachio Terrine, Cornichons and good Bread.
